Last night, my husband made spaghetti for him and the kids for dinner while I was at school. There was plenty of leftovers to make some spaghetti carbonara for lunch today! That is exactly what I did and it was wonderful. Typically, carbonara is made with pancetta or bacon, neither of which I had. However, I did have some deli ham which added the salty component I needed. I never throw any food away because I can always find a way to create something new. Not only is this a fun way to use up leftovers but it is also a great way to save money!
Spaghetti Carbonara
To make the carbonara pasta you just heat a pan over medium/low heat and add some olive oil. Fine chop some fresh garlic and onions (shallots would be good also). Add to pan and cook until tender. While that is cooking, dice some ham (bacon or pancetta) and add to pan. Cook until warm. Add about 1/3 C. of white wine or chicken stock (I used a little of both). Let this cook until it reduces slightly. Add the leftover spaghetti, tossing to coat in the sauce. Beat 2 eggs in a bowl. Remove the pan from the heat and add the eggs, tossing to coat. The heat from the pasta will cook the eggs. Sprinkle with fresh parmesan cheese and parsley. Season with salt and pepper to taste. Enjoy with some nice crunchy bread. If the sauce gets too thick, just thin with a little more chicken stock.
