Turkey Brie Panini

"Turn an old favorite into a new adventure"

Who says a grilled cheese can't be gourmet? I believe with a few modifications that boring sandwich we knew as school kids can become something amazing! Simply exchanging white bread for a crispy tuscan bread and filling with quality ingredients elevates this sandwich to a new level. I have made this with the rosemary olive oil bread which is sold at Kroger's bakery - can you say "crazy good"? I like to add some meat to this but it would be equally good with just some top quality cheese.

Turkey Brie Panini

Sliced tuscan bread or any fresh bakery bread
fresh deli sliced turkey, smoked or roasted
brie cheese, sliced
butter

honey mustard sauce: Mix together 2 tsp. yellow mustard, 1 tsp. spicy brown mustard, and 1 Tbsp. honey.

Butter both sides of bread and fill with turkey, brie cheese, and top with a little honey mustard sauce. Place in a panini maker or on a griddle with an empty pan on top. Cook until crispy on both sides. If using a griddle, you will have to flip it over to brown the other side. Slice and serve with some nice soup. You can modify this with whatever ingredients you like. If you prefer ham to turkey or want to use provolone instead of brie, go for it!
