"Comfort food can carry you back to your childhood home"
This chicken recipe is the epitome of comfort food. Just the smell of it baking makes you feel good. The key to this recipe is to use good quality parmesan cheese and grate it yourself. You can use a food processor to make the job faster since the recipe calls for 2 cups. Check the temperature of the chicken after about 25 minutes, when it reads 165 degrees it is done.
Parmesan Herb Chicken
Ingredients:
2 C. grated parmesan cheese
1/4 C. minced fresh parsley or 2 Tbsp. dried parsley
2 Tbsp. dried oregano
2 tsp. paprika
1 tsp. salt
1 tsp. pepper
8 boneless, skinless chicken breasts
1/2 C. butter, melted
Combine first six ingredients in a pie plate. Melt butter in a seperate dish. Dip chicken in butter and then coat in the cheese mixture. Place in a greased 9 x 13 pan. Bake, uncovered, at 350 degrees for about 25 to 30 minutes or until desired temperature is reached.
You might have to use to 9x13 pans, depending on the size of the chicken breasts.
