Another scorcher today and, as much as I love the sunshine, I don't want to turn the oven on. I have the perfect recipe for these hot summer days. My caprese salad combines just a few ingredients that really work beautifully together. In order to make this recipe a success, it is important to use the best quality ingredients. The bright colors make this dish as beautiful to look at as it is to to taste.
Summer Caprese Salad
fresh buffalo mozzarella
fresh tomatoes
fresh basil leaves
extra virgin olive oil
salt and pepper
Cut the mozzarella and tomatoes into slices. Place on a plate alternating tomato slices and mozzarella. Stack basil leaves and cut into ribbons (called a chiffonade in classic French cooking). Sprinkle basil over tomatoes and mozzarella. Drizzle with extra virgin olive oil and season with salt and pepper.
You can also use the grape tomatoes and the small mozzarella called boconccini. This is nice to serve at a party. Enjoy!!
