Crispy Burritos

Crispy Burritos (a.k.a. Chimichangas)

1 lb. ground beef (I use turkey)
taco seasoning mix (recipe follows)
1/4 C. water
1 can salsa style refried beans
6 flour tortillas, warm
1 C. shredded colby jack cheese
sour cream and salsa

Brown the ground beef in a skillet. Drain any excess fat. Stir in seasoning and water. Cover and simmer for a couple of minutes. Place a spoonful of refried beans on tortilla and top with a spoonful of meat mixture. Top with cheese. Fold both ends and roll. Drizzle a small amount of canola oil in a large pan. Place the burritos in the pan, folded side down. Cook on low heat until slightly brown on one side and then flip to brown the other side. I like to cut these in half on a bias and serve with lettuce, shredded cheese, sour cream, and salsa.

Taco Seasoning:

1/4 tsp. garlic powder
1/4 tsp. onion powder
1 Tbsp. chili powder
1/2 tsp. paprika
1/8 tsp. cayenne pepper (or just a sprinkle for those who want mild)
1/4 tsp. oregano
1 tsp. cumin
1 tsp. salt
1/4 tsp. pepper

Mix together.
